Cranberry Almond Protein Cookies


Cranberry Almond Protein Cookies
  (12 cookies)

  • 1 1/2 c. sifted whole wheat flour
  • 2 T. wheat germ
  • 1 t. kosher salt
  • 1/2 t. baking powder
  • 1/2 t. baking soda
  • 2 pkg. or 7 g. Truvia
  • 2 eggs
  • 1/2 c. canola oil
  • 1 t. vanilla extract
  • 1/2 t. almond extract
  • 1/2 c. slivered almonds, toasted
  • 3/4 c. cooked quinoa
    (heaping 1/4 c. dry + 1/2 c. water)
  • 1 c. quick cooking oats
  • 3/4 c. dried sweetened cranberries
  • 2 T. mini chocolate chips
  • 1.5 scoops ON Any Whey Protein Powder

Bake 350F for 8-9 minutes.

Note: Fold protein powder in last. Shape cookies to desired rounds or squares because they do not spread at all.
